What you need:

What you do:

  • Crack your eggs into a bowl and scramble with a fork.
  • Season with the Holy Trinity and stir in the spices.
  • Add a pad of butter to a pan over medium heat to melt.
  • When melted butter first begins to bubble, add eggs to pan.
  • Use a rubber spatula to constantly scrape cooked eggs from the bottom of the pan.
  • The key to my perfect scrambled eggs are the spices and to slightly undercook them. You can still see a few runny areas in the picture. There is so much flavor in the runny spots that it makes them so so so good.
  • As soon as the eggs are holding together as a whole unit, remove from heat and enjoy 🙂
