Recipe #001
What you need:
- 4-6 flour or corn tortillas (I usually use flour for this)
- 1lb of ground chorizo or chorizo sausage links
- Favorite toppings. Mine include:
- cheddar (shred yourself or buy pre-shredded depending on your level of laziness)
- lettuce
- tomatoes (diced)
- onion (diced)
- jalapeno (sliced or diced)
- avocado (sliced or diced)
- sour cream
- hot sauce (my favorite is Cholula)
- vegetable oil
- Seasonings:
- The Holy Trinity (salt, black pepper, garlic powder)
- chili powder
- cumin
- cayenne pepper
What you do:
- I like to get my toppings ready to go because the rest of the meal comes together pretty quickly, and in my house we assemble our own. So grab some bowls and chop what you need to and set your toppings aside.
- Fill a frying pan with 1/2-1in of oil. Turn the heat to medium/medium high. Allow that to heat for a few minutes.
- In the meantime, if your chorizo is in link form, take it out of the casings. I like to take a sharp knife and run the point along the length of the sausage and then peel the casing off. I can never seem to find ground chorizo in my regular grocery store. But if you can, good for you!
- Fry your tortillas. Using tongs, dip one into the oil so it gets coated on both sides as you put it into the oil. Keep a sharp knife handy as pockets will fill with air and blow up like balloons. Use your sharp knife to poke a hole in this balloons as they happen. Flip the tortilla back and forth very few seconds to fry evenly on both sides. Once it is nice and golden brown, remove from the oil and place on a paper towel. Repeat with all of the tortillas.
- Get a cast iron pan if you have it and heat about a swirl of oil over medium. Add the chorizo and using a spatula, break it up in the pan as it cooks. If you had to remove it from the casings, the chunks may stick together as they cook. Sometimes I need to use a fork to help pull it apart as well.
- Once your chorizo is ready, you can eat! Assemble your crispy tostadas as you like and enjoy.
